Diced tomatoes follow the same process as peeled tomatoes, all the way to peeling. After cutting, the juice is drained with the aid of a vibrating screen, followed by another manual or electronic sorting process. At this point, the tomatoes arrive at packaging, a phase that oversees the addition of the juice; the yield is close to that of peeled tomatoes, or slightly higher.

Packaging can be done in cans or in bags in boxes. About cans, the process is similar to that of peeled tomatoes. For bags, it is necessary to perform a preventive mixing of the diced product with the hot juice; this mix is then sent to the aseptic plant. In this case, the aseptic plant will be sized to retain the size of the cube.
