• P.D. pump
Feeds the product coming from the sorting table or from the chopper to the hot break system.
The pump includes an hopper for tomato collection from the sorting table and pre-feeding screw.
• Hot break system
This unit is being assembled on the same structure of evaporator
The function is the inactivation of the pectolitic enzymes when working at hot break (max 98°C) to obtain an high viscosity product and pre-heating of the chopped tomatoes (70°C) when working at cold break (in this case, a chopper is installed after the sorting table).
Working at hot break will achieve following performances:
- Increases the yield of the juice extraction process.
- Limitation and/or partial elimination of the synaeresis phenomena of the concentrated product.
- Increased consistency of the final concentrated product due to the total inactivation of the pectin agents.
The system assures the immediate inactivation of the pectolitic enzymes of the product, coming from the washing and sorting tables, by “injecting” the incoming raw material into a recycling hot product flow. Such recycling mass of product at about 95°C is kept circulating through wide surface heat exchanger with large diameter tubes and the holding tank by means of a centrifugal pump having a capacity of more than 30 times higher than the quantity of incoming product. After the necessary holding time the product is extracted and transferred to the juice extraction units.
Working capacity: few models for capacity up to 80 - 85 Ton/hour of fresh tomato
